Back into my groove?

Well, the past two days were very hard to get going. I am in a bit of a funk. Maybe the weather? May be feeling a cold coming on. Broke. Bored. The list goes on and on. But I did do my Shred and although I may not have been able to blast away the calories, I completed it. Today was much better though during my workout. I felt like I kicked butt.

I am the organizer of a playgroup for mommies and their little ones in our area and tomorrow we are celebrating National Pie Day! Not so fun when you are trying to lose weight though! Anyway, I just made a sugar free, fat free crustless strawberry pie. Sounds awful but looks delish. Only has 60 calories per slice too, which means I will be eating 2. Haha

Crustless Strawberry Pie
Ingredients
24 ounces fresh strawberries
1 (2.1 ounce) package sugar-free cook and serve vanilla pudding mix
1 (.6 ounce) package sugar-free strawberry flavored gelatin
2 cups water

Directions
1.Rinse and hull strawberries. Distribute evenly in a 10 inch pie pan.
2.In a medium saucepan combine pudding mix, gelatin mix, and water. Stir well and bring to a full boil. Pour mixture over strawberries and refrigerate for 4 to 6 hours. Top with light frozen whipped topping prior to serving, if desired.

Anyway, one more day of Level 2 until I am moving on and never looking back.

Day 19 complete! I guess this means I have to weigh and measure myself again tomorrow. Ugh!
